Fruit Salad

Yet another one of my favorite dishes, that is so simple.

1-2 individual containers light strawberry yogurt
1 container light or 'free' Cool Whip
Lots of bite size fresh fruit

Defrost Cool Whip a little and mix in yogurt (use up to two containers for the same amount of Points+, just depending on how creamy you want it).
Fold in enough fruit so the mixture covers it completely, but isn't too thick. Chill for 15-20 minutes if you can wait that long and enjoy!!

2 cups = 1Point+

Chocolate Cupcakes




This is ABSOLUTELY my favorite treat to make! And it really doesn't get any easier than this...

1 box chocolate cake mix
1 can diet Sprite

Mix entire can of soda with cake mix and divide into cupcake pans. Bake according to directions on box. Top with ReddiWhip (and strawberries if you want!) and enjoy!!
This is SO delicious and so quick and easy! You can use any combination you like as long as you use diet soda. Fresca with Lemon cake, Mountain Dew with White cake (my hubby's choice), Cherry Coke and Chocolate cake...the list goes on!

1 cupcake (topped) = 2 Points+

Strawberries and Cream Trifle




1/2 c Sweetened Condensed Milk
1 1/2 c cold water
1 pkg (1oz) sugar-free instant vanilla pudding mix
1 carton (8oz) reduced fat frozen whipped topping, thawed
1 angel food cake (9oz round)
4 c sliced strawberries

In a bowl, whisk milk and water. Whisk in pudding mix for 2 minutes. Let stand 2 minutes. Fold in Whipped Topping.
Cut cake in 1/2 inch cubes.
Spoon 1/3 of pudding mixture into 4 quart bowl. Top with 1/2 of the cake cubes and slided strawberries. Repeat. Chill and enjoy!!!

Baked Creamy Chicken Taquitos


1/3 C (3 oz) light cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic, or garlic powder
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken (leftovers work great!)
1 C grated pepperjack cheese

small corn or flour tortillas
salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.
Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.

Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing.

Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges and roll them up as tight as you can.
Place on baking foil lined baking sheet and spray with cooking spray. Sprinkle each with a little salt and bake for 15-20 minutes until crisp and golden brown. So yummmy! My husband and kids gobbled these up without coming up for air. Definately a keeper!

1 Taquito = 5 Points+
(I used flour tortillas and the recipe made about 8 large taquitos. If yours makes more, adjust the Points+ accordingly)

Summer Chicken Chili

1 medium zucchini, chopped
1 medium white onion
1 bell pepper, chopped fine (any color)
2 cans pinto beans, drained
2 cans black beans, drained
2 cans kidney beans, drained
2 cans corn, drained
16 oz. thick and chunky mild salsa
3 chicken breasts (uncooked)
1/2 -2 T. chili powder
14 oz. cans chicken broth (or 2 c. water and 2 T. chicken base/bouillon)
1 can diced tomatoes
8 oz. tomato sauce
1 garlic, pressed
1t. ground cumin
2 T. lime juice (fresh or from a bottle)


Sauté onion, zucchini, pepper, chili powder and garlic until onions are tender. Add other seasonings and lime juice. Add chicken breasts (cut in half or quarters) and the remaining ingredients. Simmer for 30 minutes after coming to a boil, or until chicken is tender and begins to fall apart. Take out large pieces of chicken and shred. Return shredded chicken to soup. Simmer until ready to serve. Top with chips, low fat cheese, light sour cream, extra lime juice, cilantro, etc. (Extra points+ for the added toppings).

*This recipes works GREAT as a freezer meal. you can double or triple the recipe and put the extra in Ziploc freezer bags for later--but I usually have enough for several bags with just the regular recipe. Also, I skip the veggies sometimes (to make it more kid friendly at my house or for when I just don't have them around and it still tastes great! Low fat, High fiber!

Penne Florentine

16 oz penne pasta
9 oz chopped spinach, thawed and drained
2 cups Ragu Mushroom and Green Pepper Marinara
1/2 cup part skim ricotta cheese
1/2 cup shredded part skim mozzarella cheese

Cook pasta as directed. Mix spinach, marinara and ricotta until smooth.Combine pasta and sauce. Spread into a 9x13 pan and bake 15 minutes. Sprinkle with mozzarella and bake 5 more minutes. Can also use fresh spinach, but it will still be somewhat crisp, yet still tasty!
Super FAST and my kids loved it!

6 servings at 10 Points+ each.

Delicious (and filling!) Green Chicken Chili

2 cans your favorite beans
1 can corn
7 cups water w/ 7 chicken bouillon cubes
1 onion, diced
1-2 cups diced carrots
2 diced peppers (red, green, orange or yellow)
2 diced jalapenos (optional)
4 cloves minced garlic
4 small cans diced green chilies
3 lbs cooked and shredded chicken
salt and pepper to taste

In large pot, saute onion and garlic in 2 tsp olive oil. When tender, add peppers and carrots and cook a couple minutes longer. Add chicken broth and remaining ingredients (the more veggies, the better!). Simmer for 30 minuts, or until carrots and peppers are tender and enjoy!
This also may be done in the crock pot or pressure cooker. For pressure-don't add beans or corn till after it has pressured. You may thicken with a tablespoon of cornstarch and water if you like.
